Description
Garnish with reserved pomegranate seeds, crispy spiced pita pieces, and drizzled with pomegranate vinaigrette.
Ingredient:
1 crispy spiced pita, cut into small rectangles
1/4 cup (60 mL) pomegranate molasses vinaigrette
1 C. 1/2 tsp (5 mL) dried mint
1/4 tsp. teaspoon (1 ml) Aleppo pepper
1 C. 1 tbsp ( 15 ml ) Sumac
20 purslane leaves (optional)
1/2 shredded lettuce
1 medium tomato, diced
1 cucumber diced
1/4 red and yellow or green bell pepper, diced
½ very thin onion
1/2 cup (125 mL) coarsely chopped mint
1/4 cup (60 mL) coarsely chopped flat-leaf parsley
1/2 cup (125 ml) pomegranate seeds
CRISPY PITAS WITH SPICES:
1 white pita
1 C. 1/2 tsp (5 ml) Zataar
1 C. 1/2 tsp (5 mL) sumac
Fleur de sel or ground salt and pepper to taste
2 tbsp. tablespoons (30 ml) olive oil
POMEGRANATE MOLASSES VINAIGRETTE:
1 C. 1 tbsp (15 ml) lemon juice
1 C. (15 ml) cider vinegar
1 C. 1/2 tsp (5 mL) pomegranate molasses
1/2 tsp. 1/2 tsp (3 ml) salt
1/2 cup (more or less 125 ml) olive oil
